Don't call him Jumpman
Mario had a humble beginning, wearing his trademark overalls and designed with his schnozz and mustache fully intact. He did have a larger stomach, but it didn't get in the way of jumping over girders and smashing barrels with a hammer.

If they forgot anything, it's Super Mario Bros. 2.
They didn't forget it. The design in Sunshine compared to Galaxy is more or less the same, so it would be redundant to include Sunshine AND Galaxy.
